Sample Trinitas Wine Pairings at Estancia La Jolla Hotel & Spa

Estancia La Jolla Hotel & Spa’s Trinitas Cellars Wine Bar brings wine country to you with the only Southern California tasting room for the Napa Valley winemaker. Here, you can sample Trinitas wines by the glass, try a tasting flight or order a carefully paired small plate.

Established in Napa in 2002 by Estancia’s owners, Trinitas Cellars was the Busch family’s first foray into hospitality. Latin for “trinity,” the word “trinitas” represents the winery’s mission and wine making philosophy: sun, soil and humanity.

Wine and food pairings are one of the bar’s specialties.

“We do all kinds of pairings,” says award-winning bartender Cory Jacklyn. “One popular pairing we do is a cheese and wine pairing. It features four of our wines: the Sauvignon Blanc, Carneros Chardonnay, Mysteriama red blend and our Cabernet Sauvignon. Those are paired with four nice cheeses—a truffle Gouda, a creamy goat cheese, a millage of aged cheeses from cows, sheep and goats, and then a blue cheese, along with fruit and crackers.

“The Sauvignon Blanc is our driest of the whites, which goes with the softness and the subtleness of the goat cheese,” Jacklyn continues. “The truffle Gouda is a real buttery cheese, so it’s paired with the Chardonnay. The blue cheese is with the Cabernet Sauvignon: It’s a big, full cheese. The Mysteriama blended wine goes with the millage because it’s a blended cheese. It’s very fruity. The cheese has a deep rind to it on the outside. They complement each other very well.”

Diners can also choose a chocolate and wine pairing or, if having a full meal, try the recommended wine for their specific entrée. Guests can arrange private tasting and education options, including pairing classes with advanced reservations.

“The sommelier and myself will teach classes on how to pair wines with foods,” Jacklyn says. “We’ll show what works and what doesn’t work. We also do beer and whiskey pairings and host whiskey and wine dinners.”

Weekly specials include a locals night on Tuesdays, wine Wednesdays and ladies’ night on Thursday.

In addition to wine, Trinitas Cellars Wine Bar also serves local craft beer, Estancia’s own private label Single Barrel Jack Daniel’s and artfully crafted cocktails complete with house-made bitters.
