Discover the New Menu at Balboa Bay Resort’s Waterline
You’ve heard of farm-to-table, now meet water-to-table: the essence of fresh seafood paired with the best ingredients of each season. Waterline, the signature restaurant at the Balboa Bay Resort in Newport Beach, makes changes to their menu seasonally so that they’re always highlighting the best of the area—and the ocean.
“The new menu is an opportunity for resort guests and O.C. locals to experience what Executive Chef Rachel Haggstrom’s skills and Waterline are all about,” says Balboa Bay Resort Marketing Manager Kevin Gasparro. “One look at the offerings during breakfast, lunch and dinner, and you’ll get a great idea of how creative the menu can be and how we’re using these fresh, organic ingredients. That’s what the restaurant is all about.”
“The menu is approachable yet playful. I think that’s why the guests are happy with it,” Haggstrom adds.
The summer menu features a chilled English pea soup with Meyer lemon and cream. Fresh seafood entrees include scallops, salmon, swordfish, John Dory, halibut, ahi and more. A recently added lamb porterhouse has been especially well-received, and the desserts are all brand new, with the exception of the signature foie gras ice cream, which was featured at the Newport Beach Wine & Food Festival.
“We make a house-made cone, and the foie gras ice cream is made with a Sauternes wine, so it’s still on the sweet side,” Haggstrom says, adding that it’s served with a huckleberry sauce on top.
In addition to the sea, Haggstrom is inspired by the local produce of Southern California.
“Growing up on an orchard, I look to what I grew up with this time of year, as well,” the chef says. “There’s something comforting to me about seasonal produce and items that are extremely fresh. The flavor profile is so different when it’s picked ripe. That’s usually what we look to when we come up with a menu item.”
Waterline features bay views and serves breakfast, lunch and dinner, with gluten-free, vegan and vegetarian options, as well as a children’s menu available. Private dining is also offered in two distinct rooms.
